1 ½ cups of all-purpose flour

½ cup plain or vanilla yogurt

1 teaspoon of baking soda

½ teaspoon of salt

½ cup of unsalted butter, melted

¾ cup of sugar

2 large eggs

1 teaspoon vanilla extract

3 ripe bananas, mashed

Optional: ½ cup of chocolate chips for a chocolate chip banana snack cake recipe

Directions

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8x8-inch baking pan.
  2. In a large mixing bowl, combine the flour, baking soda, and salt.
  3. In another bowl, mix the melted butter and sugar. Stir in the eggs, yogurt, and vanilla extract. Add the mashed bananas and mix well.
  4. Gradually fold the dry ingredients into the wet ingredients until well combined.
  5. If desired, fold in chocolate chips to create a banana chocolate chip snack cake recipe.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 35-40 minutes or until a toothpick inserted into the centre comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
