Sitting on a few ripe bananas and don’t want them to go to waste? Sounds like an opportunity to bake muffins! Perfectly moist, these yummy banana flavour bites make for easy breakfasts or snacks!

Dry Ingredients
½ cup sugar (white or brown sugar)
2 cups flour
½ tsp.salt
1 tbsp. baking powder
¼ tsp. ground cinnamon (optional)
Wet ingredients
1 cup creamy yogurt
1 egg
2 tbsp. milk
¼ cup vegetable oil
2 ripe bananas (chopped)
Vanilla extract (optional)

- Pull out two separate bowls: one for your dry ingredients, one for your wet ingredients.
- In a large bowl, combine the flour, sugar, baking powder, salt, and optional cinnamon. In the second bowl, combine the yogurt, egg, milk, and oil.
- Combine your wet and dry ingredients in the same bowl, then mix them all together.
- Add the ripe bananas to the mixture, then evenly divide the batter into a muffin tin.
- Bake the muffins in the oven at 400°F for 20 to 25 minutes, or until the tops are a nice golden brown.
Pro-Tips
The toothpick trick
Want to make absolutely sure your muffins are fully baked, but don’t want to slice them in half? Simply insert a toothpick into the middle of the muffin, starting from the top. If it comes out covered in mushy batter, keep baking for a few more minutes. If the batter is flaky and cakey, they’re ready!
Add extra yum to the banana flavour
Feel free to sprinkle some goodies into the batter right after you add in the banana: think chopped nuts, dried fruits, chocolate chips, or another topping of your choice.
