
Peanut Butter Energy Bites

1 cup rolled oats
½ cup peanut butter (or almond butter/sunflower seed butter)
¼ cup maple syrup
¼ cup mini chocolate chips
¼ cup dried cranberry
2 tablespoons shredded coconut
½ teaspoon vanilla extract (optional)
½ cup of vanilla yogurt
Pinch of salt

Directions
- In a large bowl, combine the rolled oats, nut butter, maple syrup, vanilla (if using), and a pinch of salt. Stir until the mixture is well combined.
- Fold in the mini chocolate chips, cranberry, and shredded coconut.
- Refrigerate the mixture for 10–15 minutes to help it firm up.
- Once chilled, use your hands or a small scoop to form balls about the size of a tablespoon.
- Store the energy bites in an airtight container in the fridge for up to one week.
