1 cup rolled oats

½ cup peanut butter (or almond butter/sunflower seed butter)

¼ cup maple syrup

¼ cup mini chocolate chips

¼ cup dried cranberry

2 tablespoons shredded coconut

½ teaspoon vanilla extract (optional)

½ cup of vanilla yogurt

Pinch of salt

Directions

  1. In a large bowl, combine the rolled oats, nut butter, maple syrup, vanilla (if using), and a pinch of salt. Stir until the mixture is well combined.
  2. Fold in the mini chocolate chips, cranberry, and shredded coconut.
  3. Refrigerate the mixture for 10–15 minutes to help it firm up.
  4. Once chilled, use your hands or a small scoop to form balls about the size of a tablespoon.
  5. Store the energy bites in an airtight container in the fridge for up to one week.
